Quick and Easy Meal Prep

Meal prep doesn't have to mean hours in the kitchen prepping a month's worth of meals.  Days like today I can do a couple little things that will help me through the week. Today it was about prepping some breakfast options.  These delicious pumpkin chocolate chip muffins are gluten free and dairy-free.  They include some healthy fats, natural sugars, fruits, and a veggie! The original recipe made a loaf but I like to make muffins so they are easy grab and go and I can freeze them individually as well.  I've included the recipe below.

These are delicious but I do want to make sure I get some protein in to start my day.  So, I whip up some hard boiled eggs in the instant pot.  These come out perfect every time and the peel comes right off!  I make a bunch then peel them, store them in a container in the fridge so they are a great add on to my breakfast or to have as a snack.  Full disclosure, I only eat the egg whites.  But my puppies love when I share the yolk! 😉So no wasting.

          

Instant Pot Hard Boiled Eggs

These are so easy! Just use your trivet or egg trivet as shown.  I pour 1.5 cups water in the bottom and place my eggs on the trivet.  Pressure cook for 5 minutes, allow for 5 minute natural release, then release rest of pressure.  Once pressure is completely released I add them to an ice bath for 5 minutes. The peel practically falls off and they are cooked to perfection! So easy!

Pumpkin Chocolate Chip Banana Bread

Ingredients:
1 C Oat flour
1 C Almond flour
2 Tbsp Coconut sugar
3/4 teaspoon Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
1/2 tsp Pumpkin pie spice
3 Overripe banana, mashed
1/2 cup Maple syrup
1/2 cup Pumpkin puree
1 tablespoon Vanilla extract
1/3 cup Coconut oil, melted
2 Tblsp vegan chocolate chips

Directions:
Preheat oven to 350° F.
Spray 9x5 loaf pan with non-stick spray. Or or prepare 16 muffin cups, I love the silicone muffin cups.


In a bowl, combine all dry ingredients.
In another bowl, whisk together wet ingredients.
Slowly add dry ingredients to wet, whisking to combine. Fold in chocolate chips.
Pour into greased pan and top with a few additional chocolate chips if desired


Bake for 40 minutes. After 40 minutes, turn off heat and leave in oven without opening the oven for an additional 10 minutes.


Remove from oven and let cool on cooling rack.
